Blueberry Blessings

Long before Cindy’s Bits and Pieces, there was a girl picking and peddling organic blueberries.   For me, there has always been lots of good therapy picking berries.  Whether I was chatting with a friend, solving life’s issues or picking in solitude listening to the birds tell you those berries are theirs. Feeling the warm summer sunshine on your back or enjoying a cooler evening picking after the sun has gone down is a pleasure. I have always enjoyed working with my hands. We are now up to 80 plus plants harvesting 115 plus gallons picked by hand each year, because there was never a vision for machines to come in and pick. This year’s crop is only about one handful due to a late freeze. Since we never know about Mother Nature, we always freeze as many as possible. We can also freeze-dry the berries which allows us to use them for years! What a revolutionary preservation of one of nature’s best antioxidants. 

Cindy’s Bits and Pieces has been trying to figure out a shelf stable way to use them for years . Last year, I was able to create a shortbread cookie with the organic berries! The learning curve was finding just the right amount of freeze-dried crushed berries it would take to truly taste those berries in the cookie.  It turned out it was about 10 times the amount I thought!  Since the berries have been a blessing to me in so many ways , I named our shortbread cookie, Blueberry Blessings. We hope you will enjoy eating them as much as we enjoy making them!

The Story of the Cheese Wafer

I had no idea what a cheese wafer was in 2015. Bits and Pieces had just begun with its only product, peanut brittle. Since Bits and Pieces was a weekend warrior business at the time, I worked my regular job as a hygienist 4 days a week. We were often blessed to have our patients bring us homemade goodies. One day, a patient brought in a cheese product. It was about the size of a half dollar. I knew in an instant that I wanted to try to recreate it. I got her recipe and set to work. After many failures and tweaks of my own, I was able to create my own recipe around my favorite ingredients. Over the years and 10,000 hours, many tweaks have been made and the cheese wafers have become our topseller.

In 2020 our business, like so many others, faced a new challenge. Since Covid had shut down so many of our markets and events, we had to find a new way to reach buyers. That is when we began working on the wholesale side of our business. As with all things new, there is a learning curve. Our wholesale business is now growing all over the southeast and you can find cheese wafers in a store near you! 

The latest challenge involved one of the products used in the cheese wafers becoming unavailable due to the company’s inability to get the ingredients to make it. You might imagine the stress of not being able to produce your best product. I love to create, just not under that kind of pressure. After a few months, and the grace of God, the ingredients became available again. Once more, we began producing just in time for another growth spurt.
